Mini muffins Recipe: Double Chocolate

These chocolate mini muffins will brighten up any grey day!!!

Ingredients:

15 g cocoa powder

70 g self-raising flour

1/2 tsp baking powder

25 g soft brown sugar

85 g milk chocolate, roughly chopped

1 egg

3 tbsp milk

40 g butter, melted

40 g plain chocolate, roughly chopped

Method

Preheat the oven to 190 degrees C. Line a mini muffin tin with 12 paper patty pans.

Sift the cocoa powder, flour and baking powder into a large bowl. stir in the brown sugar and milk chocolate. In a separate bowl, beat together the egg, milk and butter until they are evenly combined.

Tip the egg mixture into the flour mixture. Using a spoon, gently fold ingredients together until just combined. (Don't over-mix)

Spoon the mixture evenly into the patty pans. Bake in oven for 15 mins or until risen and springy. Leave to cool.

Put plain chocolate in a heatproof bowl, set over saucepan of simmering water and heat until melted. Using a teaspoon, drizzle over muffins
